Cucumber Salad

Ingredients

2 pkg. lime jello

1/2 c. sugar

2 c. lime and lemon juice and water (to taste)

1/4 c. vinegar

2 t. grated onion

2 c. finely chopped cucumbers

1/2 c. margarine

2 c. sour cream & yogurt

Directions

Sprinkle lime jello on top of 1 c. cold water.
Dissolve by heating for 3 minutes over low heat, stirring.
Add sugar-stir to dissolve.
Add lime and lemon juice and water (to taste)
Add vinegar, grated onion, finely chopped cucumbers
Chill till syrupy.
6. Blend together by hand margarine & sour cream & yogurt, mixed
Beat sour cream/yogurt mixture into gelatin.
Chill until firm.

Jean often served this in the summer with slices of fresh tomatoes.
